CAZUELITA PAISA WITH PLANTAIN CHIPS

Ingredients for four servings:

  • 1 pound of common beans cooked
  • 1 avocado diced
  • 1 tomato finely diced
  • 1 onion finely minced
  • 1 small bunch of cilantro minced
  • 1 teaspoon of olive oil
  • 1/2 cup of sweet corn kernels cooked
  • 1/2 cup of fried pork rind pieces
  • 2 packages of Turbana ripe plantain chips
  • Salt and pepper to taste

Preparation:

Mix the tomato, the onion and the cilantro with a little bit of olive oil. Serve the beans in a cazuela
and add the pork rinds, the sweet corn, the avocado, the tomato mixture and the Turbana ripe
plantain chips. Add salt and pepper to taste.
