Ingredients for four servings:

  • 1 pound of prawns peeled and deveined
  • 1 garlic clove peeled and crushed
  • 1 teaspoon of fresh ginger crushed
  • 8 tablespoons of olive oil
  • Salt and pepper to taste


  • 1 ½ cup of pineapple diced
  • 2 tablespoons of brown sugar
  • 5 tablespoons of water
  • 1 sweet pepper minced (optional)
  • Salt and pepper to taste

To serve:

  • Turbana lemon plantain chips
  • White rice
  • Cilantro (optional)
  • Lemon (optional)


In a frying pan, sauté the garlic and the ginger. Add the prawns and season with salt and pepper
until they are just right. Then set aside.
Sauce: In the same frying pan you prepared the prawns, put the pineapple, add the brown sugar
and the water and cook until a caramel forms. Season with salt and pepper. Finally, add the
prawns to coat them with the sauce. Serve with white rice and Turbana plantain chips.
